Homemade Black Bean Burgers


 We ate these http://allrecipes.com//Recipe/homemade-black-bean-veggie-burgers/Detail.aspx on 100% whole wheat thin buns with avacado, onions, tomatoes, and all the yummy works. Side dish was orange slices! mmm BEST dinner, hands down! I can't tell you how healthy we have been feeling since almost stopping meat entirely! We are down to maybe 1 meat dish a week and its usually shrimp or fish or chicken.

Yes! I hit up the local produce stand today, and for lunch I enjoyed a home made whole wheat pizza with onions, green pepper, fresh mushrooms and a few pepperoni slices for fun! It felt so good to eat veggies! I also had an apple with it. For dinner tonight we are having chicken pot pie (one chic. breast for whole fam. of six)choc full of veggies, and on the side, steamed broccoli, and mashed sweet potatoes with applesauce. (I'm still trying to convince the kids on the sweet potatoes) I'm glad you're having fun with it, I hope you and me both have stronger immune systems from it! Here here!

Cyndi Go you!! That sounds sooo yummy. Whats the sweet potato recipe? we LOVE sweet potatoes almost any way they can be eaten lol

Here is a recipe you may enjoy! I am warning you though- they are very addictive!

Sweet Potato Fries
3 large sweet potatoes; peeled and cut into sticks/wedges

2-3 tbs olive oil

2 tbs. brown sugar

1 tsp. cumin

1 1/2 tsp. garlic salt/powder

1/2 tsp. black pepper

1/2 tsp. cayenne pepper

1 tsp. salt



Place in a 425 degree oven (try to use a greased cookie sheet). Bake for 20 minutes and then flip potatoes and bake another 20-25 minutes until crispy. Enjoy!


These are so yummy and my kids even gobble them up!
